Why do you want to do FJR when you clearly know nothing about them or their uniforms?
It's not just you Rory, there are lots of posts along these lines.
Yes, the collar tabs indicate rank as do the shoulder boards.
In addition to your chosen rank you will need a cloth chest eagle.
What period of the war, which regiment and what theatre? That governs what other insignia you may have.

Sgt Rank wears tresse round the collar edge and shoulder boards just for starters

Gulls are an indication of rank
If you have tresse round the collar its one for unteroffizer , 2 for Oberjager, 3 for Feldwebel 4 for ober and stabs feldwebel (per collar tab)

Junior ranks have no tresse and its one for Jager , two for Gefreiter (single chevron on Left arm) three for Obergefreiter (double chevron on L arm) four for stabsgefreiter (triple chevron on L Arm)

Cloth Jump badge (if you are portraying a Sgt rank) Then again 1944 you may not have had a jump badge as FJ units were filled up with field division and other troops that never did jump training.
Depending on the time period and the unit you may have jumped in Crete (Kreta cuff title) served in Afrika (Afrika cuff title) and onwards and upwards

As Sean said you might want to do a little research first

What period are you wanting to start with? What weapon do you think you will carry? By 'Med' do you mean Italy or N.Africa?
That governs if Sumpfmuster would be suitable as a smock, what trousers would be worn and if there was a Sumpf bandolier for your weapon. There were two main weapons that had bandoliers but I'm sure only one was produced in Sumpfmuster.

Cheapest way of badging up your flieger will be as a jager. A single gull on each collar, Luftwaffe adler on your chest. Leave it at that.

Spend some time researching (It's so much fun! :) ). Or speak to Fallschirmjager re-enactors, they will alway's be happy to chat. :D

So, no Sumpf bandolier for k98.
Trousers in Italy could be Lufty tropical type, green wool jump trousers.
Sumpf smock after mid '43. Be careful though, most repros are in the '44 pattern sumpf print.
You will be safer with a splinter B smock.
